CAJUN REMOULADE Mix together 1 cup of mayonnaise, 1 small jar of capers, 4 chopped onions/scallions, and 1⁄4 cup fresh lemon juice. Sprinkle with Cajun seasoning to taste, and spread onto sausage. ROASTED BELL PEPPERS Slice red, yellow & orange bell peppers julienne; spread onto center of large sheet of heavy duty aluminum foil. Drizzle with olive oil, a pinch of fresh garlic, and add salt & pepper to taste. Wrap up in foil and put on hot grill approx. 7 minutes. BLACK BEAN RELISH Drain a 15 oz. can of whole black beans; add a chopped red bell pepper, 1 bunch scallions, 1⁄4 cup chopped cilantro, a diced jalapeño, 1⁄4 cup olive oil and 1⁄4 cup red wine vinegar; mix well. Chill at least one hour before serving.
