Tex Mex Chicken Chili

8-10 servings

INGREDIENTS:

4 links Sausages by Amylu Chipotle Pepper Chicken Sausage, diced into 1⁄2” pieces
4 links Sausages by Amylu Gourmet Chorizo Chicken Sausage, diced into 1⁄2” pieces (can substitute 4 links of the Chipotle Pepper flavor)

Red onion, diced
1 Tsp.
Garlic, chopped
1 Red pepper, chopped
1
Green pepper, chopped
1
Yellow pepper, chopped
1 large
Jalapeño pepper, diced
2 tsp. Vegetable oil
30 oz. can Diced tomatoes
2 15-oz.cans Chicken broth
15-oz.can
Black kidney beans
15-oz.can
Great Northern beans
15-oz.can
Mexican chili beans
12-oz.can
Tomato paste
  Salt, chili powder, and pepper (white, black or cayenne) to taste

DIRECTIONS:

  • Sauté, in a large skillet, onion, garlic and all peppers in vegetable oil until tender, about 5 minutes.
  • Add Sausages by Amylu Chipotle Pepper and Gourmet Chorizo Chicken Sausages, diced tomatoes, chicken broth and all beans.
  • Bring to a low boil.
  • Season with salt, chili powder and pepper.
  • Add tomato paste; heat an additional 30 minutes.
  • Top bowls of chili with nacho chips, sour cream and/or diced avocados.

Serve with Southwest Corn Bread on the side.
