DIRECTIONS: - Cut chicken in 1-inch pieces; season with salt and pepper and set aside.
- Simmer sausage in wine 4-6 minutes; set aside.
- Simmer mushrooms in butter and enough water to cover for 3-4 minutes to soften.
- Arrange sausages, chicken and mushrooms in an alternating order on skewers.
- Grill 7-8 minutes on each side until heated through.
Serve skewers on a bed of saffron rice and garnish with red, yellow and green pepper rings.
