INGREDIENTS:
| 4 links | Sausages by Amylu Italian Chicken Sausage with Parmesan Cheese, diced into 1/2" slices |
| 1 | Unbaked pastry shell, 9" |
| 1/2 cup | Onion, chopped |
| 4 | Eggs, lightly beaten |
| 1 cup | Cream (or Half & Half) |
1/2 cup
| Milk |
1 Tbsp.
| Fresh parsley, chopped |
| 1/2 tsp. | Salt |
| 1/8 tsp. | Ground cayenne pepper |
| 1/8 tsp. | Black pepper |
| 1 cup | Red pepper, chopped |
| 1 cup | Yellow pepper, chopped |
8-oz.pkg.
| Shredded Italian cheese blend |
DIRECTIONS:
- Prick pastry shell with a fork & bake at 400° until just beginning to brown, approx. 5-8 minutes; let cool.
- Brown chicken sausage in a skillet; transfer to a medium bowl.
- Add onion to skillet drippings; sauté over low heat until tender; add to sausage in bowl.
- Stir in eggs, cream, milk, parsley, salt & all peppers.
- Sprinkle cheese in bottom of pastry shell & slowly pour in sausage/egg mixture.
- Bake in preheated 425°F oven for 10 minutes; reduce heat to 350°F & continue baking for an additional 30 minutes.
- Serve after quiche has cooled approx. 10 minutes.
Experiment with different vegetables! Kalamata olives, artichoke hearts and broccoli can all be substituted for the fresh peppers.
