Italian Chicken En Brochette

Serves 4 

INGREDIENTS:

6-8 links Sausages by Amylu Italian Chicken Sausage with Peppers & Onions
3 Chicken Breasts, skinned, boned and split
1 cup White wine
12 large Mushrooms
2 Tbsp. Butter
  Salt and pepper to taste

DIRECTIONS:

  • Cut chicken in 1-inch pieces; season with salt and pepper and set aside.
  • Simmer sausage in wine 4-6 minutes; set aside.
  • Simmer mushrooms in butter and enough water to cover for 3-4 minutes to soften.
  • Arrange sausages, chicken and mushrooms in an alternating order on skewers.
  • Grill 7-8 minutes on each side until heated through.

Serve skewers on a bed of saffron rice and garnish with red, yellow and green pepper rings.
