INGREDIENTS:

2 links Leon's Sausage Bratwurst
1 Red onion, large, sliced
2 Red potatoes, large
4 servings Mixed greens (iceberg, romaine & curly lettuce suggested)
2 Tomatoes, sliced into wedges

 

Ingredients for Dressing:

1 tsp. Garlic, fresh or dry, minced
1 tsp. Cracked fennel seed
1 tsp. Coriander seed, crushed
2 Tbsp. Prepared yellow mustard
2 Tbsp. Cider vinegar
1/4 cup Oil or light salad oil
1 Tbsp. Brown sugar (to start, then add to taste)
  Beer to taste, optional

DIRECTIONS:

  • Bake 2 large red potatoes; cool completely and slice 1/3" thick.
  • Grill bratwurst links.
  • Put sliced red onion seasoned with (salt, pepper and olive oil) in aluminum foil; place on grill.
  • In a separate bowl, mix together all dressing ingredients, except oil.
  • Slowly add oil so it blends together into a thick consistency.
  • Add beer in last, just till you get the beer flavor or until the dressing has a creamy consistency; add salt and pepper, to taste.
  • Divide greens into four separate bowls; add tomato wedges, grilled onions, potato slices, and warm, sliced bratwurst.
  • Pour dressing over greens and toss well; serve immediately.
