| Sausages by Amylu Apple & Gouda Cheese Chicken Sausage, cut diagonally into 1" slices. |
| 3⁄4 lb. | Bread cubes |
| 1⁄2 stick | Butter |
1 cup
| Spanish onions, 1⁄4" dice |
| 1 cup | Celery, 1⁄4" dice |
| 1 Tbsp. | Garlic, freshly chopped (optional) |
2 tsp.
| Poultry spice |
2 cups
| Granny Smith apples, peeled & sliced |
| 1 | Spice packet from boxed stuffing |
2 1⁄2-3 cups
| Chicken stock |
| 1⁄2 stick | Butter, cut into small cubes |
| 1⁄2 cup | Scallions, chopped |
| 1⁄2 cup | Parsley, chopped |
| | Salt & pepper, to taste |
DIRECTIONS:
- Bake bread cubes at 225°F until fully dry, but not browned.
- Melt 1⁄2 stick of butter in large, heavy-bottomed pot; add onions & celery (and garlic), and sauté over medium high flame, until light golden brown.
- Add apples, spices and Sausages by Amylu Apple & Gouda Cheese Chicken Sausage; cook over medium high flame for 3-4 minutes.
- Remove from heat; gently mix in bread cubes; add heated chicken stock slowly, not adding too much too quickly.
- Gently fold in butter cubes, parsley and scallions.
- Adjust the seasonings & amount of stock, to reach desired moistness of stuffing.
- Bake approx. 1 hour at 350°F, in baking dish covered with foil.
