Amylu's Chicken Sausage Stuffing

6-8 Servings

INGREDIENTS:

4 links Sausages by Amylu Apple & Maple Chicken Sausage, diced into 1⁄4” pieces
1
Stick of butter
1 med. Onion, diced
3
Celery stalks, diced
1 Garlic clove, minced
1 med. Granny Smith apple, diced
1 Bay leaf
3 Tbsp. 
Fresh sage, chopped
3 Tbsp.
Fresh parsley, chopped
1 Tbsp. Fresh thyme, chopped
1⁄2 Tbsp. Salt
1 1⁄2 cups Chicken stock
1⁄2 cup 
Apple cider or juice
3 cups 
Day-old bread, cut into 1⁄2” pieces
2 cups Seasoned croutons

DIRECTIONS:

  • Brown Sausages by Amylu Apple & Maple Chicken Sausage in 1⁄4  stick of butter.
  • Sauté, in a separate medium (4 quart) saucepan, the onion, celery and garlic in remaining stick of butter.
  • Add diced apples, when vegetables are soft.
  • Cook for another minute; the apples should remain a little crisp.
  • Stir in herbs and salt.
  • Add cider and chicken stock; bring to a boil; turn off heat.
  • Combine diced bread, croutons and Sausages by Amylu Apple & Maple Chicken Sausage in a large bowl.
  • Slowly pour liquid mixture over the bread/sausage, stirring as you add, to combine evenly; bake in  350° oven, approximately 30 minutes.
