INGREDIENTS:
| 4 links | Sausages by Amylu Apple & Maple Chicken Sausage, diced into 1⁄4” pieces |

| Stick of butter |
| 1 med. | Onion, diced |
3
| Celery stalks, diced |
| 1 | Garlic clove, minced |
| 1 med. | Granny Smith apple, diced |
| 1 | Bay leaf |
3 Tbsp.
| Fresh sage, chopped |
3 Tbsp.
| Fresh parsley, chopped |
| 1 Tbsp. | Fresh thyme, chopped |
| 1⁄2 Tbsp. | Salt |
| 1 1⁄2 cups | Chicken stock |
1⁄2 cup
| Apple cider or juice |
3 cups | Day-old bread, cut into 1⁄2” pieces |
| 2 cups | Seasoned croutons |
DIRECTIONS:
- Brown Sausages by Amylu Apple & Maple Chicken Sausage in 1⁄4 stick of butter.
- Sauté, in a separate medium (4 quart) saucepan, the onion, celery and garlic in remaining stick of butter.
- Add diced apples, when vegetables are soft.
- Cook for another minute; the apples should remain a little crisp.
- Stir in herbs and salt.
- Add cider and chicken stock; bring to a boil; turn off heat.
- Combine diced bread, croutons and Sausages by Amylu Apple & Maple Chicken Sausage in a large bowl.
- Slowly pour liquid mixture over the bread/sausage, stirring as you add, to combine evenly; bake in 350° oven, approximately 30 minutes.
